Fresh Noodle Production Process

1. Dough Mixing

The process begins by mixing flour with water and the approved recipe ingredients. Flour properties, hydration, liquid temperature and mixing action affect the dough delivered to resting and rolling.

Fresh noodle lines may use vacuum mixing or horizontal batch mixing. Horizontal mixing can suit factories that need identifiable recipe lots and flexible campaigns. Vacuum mixing is selected when trials show that it supports the required hydration, dough structure or eating quality.

Ask the supplier to state flour charge, total dough mass, minimum and maximum working batch, full cycle time, liquid dosing method, discharge temperature and cleaning procedure. The mixer must feed the planned hourly output after charging, mixing, discharge and reset time are included.

2. Dough Aging

Aging allows moisture to distribute through the dough before sheet formation. The required residence time depends on the flour, recipe, hydration and target product. The equipment should feed the next section at a controlled rate without leaving old dough behind.

The supplied reference information gives 20–30 minutes for this stage. The final aging time should be established through trials because flour and hydration change how the dough develops.

3. Compound Rolling and Sheet Reduction

The original process uses two dough sheets that are combined, followed by transverse folding and further rolling. Compound rolling and successive reduction stages form a continuous sheet at the required thickness.

This route is intended to develop a suitable sheet structure before cutting. Finished texture still depends on flour, formulation, hydration, aging, roller settings and cooking. Trials should measure sheet stability, thickness across the working width and cooked texture instead of relying on a general claim.

4. Slitting and Portioning

The sheet is cut into strands and then divided to the required length or portion. Send the supplier the noodle width, thickness, length, portion weight and acceptable variation. List every cutter set required for planned products and confirm the changeover method.

5. Cooking or Steaming

Cooked fresh noodles require a controlled thermal step. The reference process uses low-pressure saturated steam. A multilayer steam box or another cooking arrangement must be matched to noodle dimensions, loading and required cooking degree.

Request the heating method, steam conditions, residence range, temperature measurement, condensate handling, exhaust and cleaning access. Product trials should define the accepted cooking result.

6. Pasteurization or Another Microbial-Control Step

The original fresh noodle route is mixing → rolling → aging → slitting → cooking or pasteurization → cooling → nitrogen-flush or vacuum packaging. Pasteurization may be included when required by the approved product process, but it is not a universal setting for every fresh noodle.

The product owner is responsible for food-safety and shelf-life validation. A project specification should identify the treatment method, time and temperature controls, measurement points, data records and connection to cooling. Pasteurization may be standard, optional or supplied separately depending on the line configuration.

7. Cooling

After cooking or heat treatment, the noodle must reach the agreed packaging condition. Cooling design affects product temperature, surface moisture, sticking and exposure time. Review cooling medium, residence time, filtration where required, drainage, condensation control and the response to a packaging stop.

8. Nitrogen-Flush or Vacuum Packaging

Packaging must fit the product rather than the nominal line output. The required inputs include pack dimensions, product weight, material specification, sealing requirement, target speed, code information and inspection needs. The exact vacuum or nitrogen-flush arrangement must be selected for the approved product and package.

Neither packaging method proves a fixed shelf life by itself. Validate the complete combination of formulation, thermal process, cooling, hygienic handling, package integrity and storage temperature.
